History per Google: The brand was created in 1889 by Chris Rutt and Charles Underwood, using the self-rising pancake flour they developed at the Pearl Milling Company in St. Joseph, Missouri. To market the product, they named it ”Aunt Jemima, ” borrowing the moniker directly from a popular 1875 minstrel show song. The image chosen to represent the brand was the ”mammy” archetype. In 1893, the R.T. Davis Milling Company, which had acquired the brand, hired Nancy Green to be the living embodiment of Aunt Jemima.
